Vegetable Traybake

PREPARATION Time: 10 minutes 
COOKING Time:  40-50 minutes 


500 grams baby potatoes

2 green bell peppers

2 red bell peppers

2 medium-sized red onions

100 grams cherry tomatoes

200 millilitres virgin olive oil

1 tablespoon Mahbir Handmade Garam Masala

sea salt, season to taste


  1. Preheat the oven to 200°C/180°C Fan/gas mark 6/400°F. Line a baking tray with baking paper and set aside.
  2. Cut all of the vegetables so they’re similar in size. This will ensure that they roast evenly.
  3. Place the vegetable pieces onto the prepared baking sheet. Drizzle with olive oil, salt and the Garam Masala, making sure all of the pieces are well and evenly coated.
  4. Cover with aluminium foil and roast for about 20 minutes. Remove the foil and continue roasting for a further 20-30 minutes until crisp and golden.
  5. Serve as a delicious side dish or make it as a meal together with a garden salad.

This healthy and delicious vegetable traybake pairs perfectly with our recipe for cornflake-crusted Tandoori Fish. Let the oven do the hard work. Firstly, put the vegetable traybake into the oven. At the point you need to remove the aluminium foil before continuing to roast, place the tray of cornflake-coated cod fillets into the oven as well. This way, the entire meal will be ready at the same time!
